A great option for lunches, even on-the-go lunches, is a fresh salad.  Don’t like lettuce?  Choose another green like baby spinach or (maybe our favorite!) arugula.  If you’re a busy person or don’t have a lot of time in your day, work ahead and make your week’s worth of lunch salads and store them in Mason jars!  The entire salad will stay fresh and great tasting all week!
